  1. You need 150 g of pre roasted butternut squash, diced.
  2. Prepare 400 g of tinned chickpeas, drained.
  3. You need Handful of fresh coriander.
  4. It's 1 of huge spring onion or 2 normal size! Finely chopped.
  5. You need 1 tsp of cumin.
  6. You need 1 tsp of smoked paprika.
  7. Prepare 1/2 tsp of dried chilli flakes.
  8. You need 1 tbsp of olive oil.
  9. You need 1 of lemon both zest and juice.
  10. It's of Generous pinch of salt and black pepper.
  11. You need of Pumpkin seeds to garnish.

  1. Prepare the ingredients as above. My spring onion was huge! 😆 Photo below so that you can admire it!.
  2. Simply mix everything together. I kept the veg finely diced (I roasted it in larger pieces and then diced when it was at room temp but it would work either way..
  3. I finished with a sprinkle of pumpkin seeds for some crunch..
